Alas, I’m still feeling fairly under the weather, so this week of the cookbook challenge has been less than an overwhelming success. As much as I love the recipes from Vegan Soul Kitchen, they’re quite labour-intensive, and with my aches and pains and complete lack of energy, a couple of hours in the kitchen for dinner just isn’t an option. I’ll be sure to come back to this book after the challenge, when I’m feeling up to it- because it really does deserve my attention.

To make up for the lack of challenge-related blogging this week, here’s a quick sneak peak at some other tasty treats I’ve been working on lately, as a tester for the lovely Isa and Terry‘s new book. For those not already in the know, it’s all about pie. And from what I’ve made so far, it’s a definite winner.

Strawberry handpies

Pecan pie

Boston cream cake pie

Sweet potato brazil nut crunch pie

That’s right, even while sick enough that dragging myself out of bed is a struggle, I can find time to bake. I think I have my priorities sorted just right.

  1. Holy hell do I ever wish I was picked as a tester! That pecan pie looks
    a-mazing, it’s not maple based is it? I find too many vegan recipes call for maple, which just doesn’t seem right to me.

  2. It does have maple, yeah. But it’s seriously awesome, definitely my favourite pie so far. I didn’t find the maple too excessive, but I might just be a desensitised Canadian at heart.
